I have made a video about the health benefits of organically grown & naturally matured olives.
I want to share it with you, it is quite amazing that olives has 10 times the anti-oxidants as green tea.
But not just any olives, the olives you choose must be organically grown and naturally matured. If not, the olives are 95% of the times treated with Caustic Soda; this makes the olives de-bitter within 24 hours. What happens is that the olives after being treated with the Caustic Soda are washed and washed up to 5 times, literally all the nutrients are washed out of the olive. The olive is left yellow greenish, with very little taste and well nothing in there for you. This method is the normal production method and it creates a lot of waste water, which many times are lead directly into the Mediterranean sea. In the areas where this is the procedure underwater life is dead, suffocated by the Caustic Soda. You can also imagine how much water is used, it is a terrible waste of water, a very heavy water footprint.
That the olives you choose should be organically produced, means that they are not treated with any pesticides or chemicals to kill the olives worst enemy the "Dagos fly", the chemicals do not only kill the fly however, but all other insects as well, which means that the life between the olive trees in conventional production is quite dead. The organic production uses a trap for the Dagos fly, which is working fine, not only is there used no chemicals, but the olive grows are full of life, insects and birds. One of the olive producers i know, Nikos Vallis, who turned into organic production says: " I can feel the the trees are happy now."
