Thinking about the choices you make each day as you go about your daily life. Asking yourself if you know where the food you buy come from, and what difference it would make if enough people thought about it, became aware. I imagine what a different world we would live in, if enough people choose organically produced food, and other products. It would make a tremendous difference, to your own health, to the environment, the soil, the drinking water, the air and so on. If enough people started to realize this, their choice to buy organic would make more producers choose to produce organic and environmental friendly.

Health Activism:
The most dramatic form of activism we all can participate in: Choosing our food. Nourishing ourselves, while deliciously saving our world. I believe it is about time we realize how much power we have as consumers, our choices every day count; they count for our own health, the health of our family and for the future of our planet. It really is in our hands to make a difference.  We can actually change the world, what about that?
Choose organic, choose sustainable, choose green, choose fair-trade and choose healthy.
Our health is, overwhelmingly, tied to the quality of the food we eat. And the food quality is directly tied to the quality of the soil in which it was grown. Therefore, the health of the environment has a direct tie to our health by way of food, not to mention by way of the air we breathe and the water we drink.

 Organic Extra virgin Olive Oil Health Benefits

The health benefits of Organic Extra virgin olive oil are extensive with new positive attributes discovered all the time. One prominent cardiologist recommends at least three tablespoons of organic extra virgin olive oil each day to enjoy the many ways olive oil can be beneficial to your health and well being.
In addition to bolstering the immune system and helping to protect against viruses, Organic Extra virgin olive oil has also been found to be effective in fighting against diseases such as:
Cancer: The phytonutrient in Organic Extra virgin olive oil, oleocanthal, mimics the effect of ibuprofen in reducing inflammation, which can decrease the risk of breast cancer and its recurrence. Squalene and lignans are among the other olive oil components being studied for their possible effects on cancer.
Heart Disease: Organic Extra virgin Olive oil helps lower levels of blood cholesterol leading to heart disease.

Organic Extra virgin Olive Oil Diet Reduces Risk of Type 2 Diabetes
Traditionally a low fat diet has been prescribed to prevent various diseases such as heart disease and diabetes. While studies have shown that high fat diets may increase the risk of certain diseases such as cancer and diabetes, it appears that it is the type of fat that counts rather than the amount of fat. We now know that a diet rich in monounsaturated fats such as the ones found in Organic Extra virgin olive oil, nuts and seeds actually protects from many of these chronic diseases.
A recent Spanish study published in the scientific journal Diabetes Care showed that a Mediterranean style diet rich in Organic Extra virgin olive oil reduces the risk of type II diabetes by almost 50 percent compared to a low fat diet. Type II diabetes is the most common and preventable form of diabetes.
Organic Extra virgin Olive Oil Found to Help Prevent Skin Cancer.
A study conducted by Dr. Niva Shapira from Tel Aviv University in Israel and Bob Kuklinski of Rockstock University in Germany found that olive oil, along with other components of a Mediterranean diet, may contribute to the prevention of malignant melanoma.  Malignant melanoma, which is the most dangerous type of skin cancer, may be slowed down by consumption of Organic Extra virgin olive oil, which is rich in antioxidants.
The research showed that the body develops a resistance to the damaging rays of the sun due to carotenoids. Carotenoids are the color pigments found in fruits and vegetables such as watermelons, tomatoes, pumpkins and carrots. Olive oil has also been found to protect the skin against the damaging effects of UV rays.

It is, however, very important that we distingue between olive oils, the above contributes of olive oils are ONLY true if we are taking about a certain kind of olive oil namely: Organically produced Extra virgin olive oil. But there are also differences between the organically produced extra virgin olive oils. The key olive compounds are oleocanthal and oleacein. Oleocanthal has anti-inflamatory effect and Oleocein is a powerful antioxidant. The highest concentration of these key compounds is found in Koroneiki organically produced extra virgin olive oil.
Furthermore there are other factors that affect the quality of the organically produced extra virgin olive oils: Processing temperature is another factor affecting oleocanthal and oleacein levels.
When we test the same olive fruit in the same olive mill but using different temperatures you can see a huge difference in the concentration of these compounds, with high temperature having negative effects.
There is as well a positive link between early harvesting and high level of both compounds.
Organically produced extra virgin olive oils with high level of oleocanthal and oleacein retain most

of this content up to 18 months after the harvest.

Transformation
An old friend of mine asked me how I became the person I am today, because she clearly remembered quite the opposite: A stressed out, depressive, chain smoker, 20 kg heavier, looking older and more tired 7 years ago.
A transformation happened. I was going through a very though divorce, I found myself utterly alone with three small kids in a foreign country. I had to solve an economic impossibility and deal with the stress & despair my life condition gave me.
A therapist helped me to deal with the stress and the depression I had. It became clear just how important food and training was for me to overcome my anxiety. A plant based diet combined with healthy fats and protein in combination with a training program worked better than I could ever had imagined. Not only did I get over my stress and depression, I gained so much energy and happiness, bonus I lost 20 kg and I literally look 10 years younger today. Through this whole process I found my passion: My passion for food and peak performance.
The more I learn about food and what it does to our body as well as our minds and wellbeing, the more I have understood how important it is that we eat clean whole foods. Just how important it is that these foods are not treated with pesticides, herbicides, growth hormones, antibiotics, preservatives and GMO. That the foods we choose are organically grown, whole foods, nothing readymade. It is making it yourself and if you have no time, then: have an apple or a carrot.
I had this picture taken of me because I really want to share this, I am 42 I have had 3 kids and 4 years ago I was 20 kg heavier.




I have made a video about the health benefits of organically grown & naturally matured olives.
I want to share it with you, it is quite amazing that olives has 10 times the anti-oxidants as green tea.
But not just any olives, the olives you choose must be organically grown and naturally matured. If not, the olives are 95% of the times treated with Caustic Soda; this makes the olives de-bitter within 24 hours. What happens is that the olives after being treated with the Caustic Soda are washed and washed up to 5 times, literally all the nutrients are washed out of the olive. The olive is left yellow greenish, with very little taste and well nothing in there for you. This method is the normal production method and it creates a lot of waste water, which many times are lead directly into the Mediterranean sea. In the areas where this is the procedure underwater life is dead, suffocated by the Caustic Soda. You can also imagine how much water is used, it is a terrible waste of water, a very heavy water footprint.
That the olives you choose should be organically produced, means that they are not treated with any pesticides or chemicals to kill the olives worst enemy the "Dagos fly", the chemicals do not only kill the fly however, but all other insects as well, which means that the life between the olive trees in conventional production is quite dead. The organic production uses a trap for the Dagos fly, which is working fine, not only is there used no chemicals, but the olive grows are full of life, insects and birds. One of the olive producers i know, Nikos Vallis, who turned into organic production says: " I can feel the the trees are happy now."
